Dried Chickpeas

If you are a fan of making your own hummus with tinned chick peas, we highly recommend using home cooked instead. They are much softer so make the hummus very creamy. They are excellent in many other dishes, including salads and curries too! Although it takes time, there is really not much work to cooking your own chick peas. The method we find works best is from Samin Nosrat’s book – Salt, Fat, Acid, Heat: The chick peas will double in weight so use half the weight you want. eg. A can is about 250g once drained so use 125g of dried. Soak the chick peas for 48 hours in a large bowl of water (filtered if you can). Add a tbsp of bicarbonate of soda and a good few pinches of salt. Rinse very well. Place in a large pan of cold water. Bring to the boil and boil for 5 minutes skimming off any scum. These speckled, greenish-bluish-greyish orbs, are also known as green French lentils or lentilles du Puy. They retain their shape when cooked and have a pleasant, poppy texture. This lack of mushiness makes them ideal meat alternatives in classic dishes such as lasagne or shepherds pie. To cook: Rinse them well, then boil in a large pan of water or stock for 25-30 minutes. Organic Cacao Powder is ground down from roasted cacao nibs. This process gives you powdered chocolate in its purest form without added fats and sugar you usually find in chocolate products). The beans are fermented and roasted in a careful process. This breaks down the phytates in the beans and gives them a roasted flavour. Cacao nibs originated in South America where they were revered by ancient cultures and often used as currency! Cacao is the most complex food substance on Earth and has the highest anti-oxidant concentration of any food. They have a subtle chocolatey taste and more bitter than chocolate. Granola

Every good breakfast starts with granola! This version is made with crunchy oat clusters with barley and coconut. There’s no fruit in this granola but you could always add your own dried fruit. If you do, we recommend placing the dried fruit on a baking tray in a Gas 4/180C oven for about 5 minutes. This will soften it down and make it even juicier. Mix it in with the granola once cooled. Organic Fairtrade Indonesian Mandheling Coffee

These Organic, Fairtrade single origin coffee beans from Wogan coffee is their very darkest roast. It is taken to the beginning of a second crack. This is a dark smokey coffee that packs a punch, for those who enjoy a highly developed roast. Tasting notes of berries and dark chocolate. Origin: Permata Gayo Mandheling, Aceh Province, Sumatra, Indonesia Founded in 2006 with the aim of guaranteeing traceability along the supply chain, Permata Gayo manages all aspects of coffee production, improving both consistency and quality. The Galling-Basah process is unique to Sumatra and involves three steps, depending on moisture content: ‘Gabah’, wet parchment coffee which is dried immediately and hulled; ‘Labu’, wet green beans at about 30-40% humidity; and finally ‘Assalan’, which is exported at 12-13% humidity.
